INGREDIENTS

1 envelope unflavored gelatin
1 cup 1% milk
cup packed dark brown sugar
¾ cup part skim ricotta cheese
¼ cup unsweetened cocoa powder
4 tsp. orange liqueur
1 tsp. vanilla extract
RECIPE

  • In a small saucepan sprinkle the gelatin over the milk.  Let stand until softened, about 1 minute.
  • Stir in the brown sugar. Cook over medium-low heat, stirring constantly, until the gelatin completely dissolves, about 2 minutes. Do not allow it to boil.
  • In a blender, combine the ricotta cheese, cocoa powder, orange liqueur, and vanilla.  Puree for 1 minute. Scrape the sides of the container as needed.
  • Reduce the speed to low. Open knob on the lid and gradually add the milk mixture. Blend until well combined.
  • Pour the pudding into serving cups.
  • Refrigerate, covered, until set. (approx. 2 hours)
