INGREDIENTS

4 large tomatoes, peeled (1¼ lb.)
2 stalks celery, chopped finely
¼ red bell pepper, chopped finely
4 tbsp. sugar
½ tsp. pepper
2 cups water
RECIPE

  • Peel tomatoes by placing them whole in boiling water just until the skins split. Run under cold water and slip skins off.
  • Place tomatoes and remaining ingredients in large pot.
  • Cover and bring to a boil.
  • Continue to boil gently for 15 minutes. Serve with croutons if desired.
