INGREDIENTS

13 lb. boneless pork loin, trimmed and tied
¼ cup flour
1 tbsp. black pepper
RECIPE

  • Preheat oven to 350ºF.
  • Place roast on rack in roasting pan.
  • Mix together flour and pepper and rub all over.
  • Bake for 1 hour and check internal temperature with a thermometer. (Internal temperature should register 160ºF.) Continue roasting if temperature has not reached 160°F. Check every 15 minutes until desired temperature is reached.
