| RECIPE |

Preheat oven to 350ºF.

Place roast on rack in roasting pan.

Mix together flour and pepper and rub all over.

Bake for 1 hour and check internal temperature with a thermometer. (Internal temperature should register 160ºF.) Continue roasting if temperature has not reached 160°F. Check every 15 minutes until desired temperature is reached.
