INGREDIENTS

4 (6-inch) tortillas
1 cup shredded 2% Mexican blend cheese
¼ cup finely diced onion
¼ cup red pepper, chopped
  salsa, if desired
RECIPE

  • Preheat skillet over medium-high heat.
  • Top each tortilla with ¼ cup cheese and equal amounts of onion and pepper.
  • Fold in half and place in preheated dry skillet. Press down lightly.
  • Make sure tortilla doesn’t burn and flip after about 1 minute and continue to heat until cheese is melted. Serve with salsa if desired.
