finely diced onion |

red pepper, chopped |

| RECIPE |
- Preheat skillet over medium-high heat.
- Top each tortilla with ¼ cup cheese and equal amounts of onion and pepper.
- Fold in half and place in preheated dry skillet. Press down lightly.
- Make sure tortilla doesn’t burn and flip after about 1 minute and continue to heat until cheese is melted. Serve with salsa if desired.
