INGREDIENTS

  nonfat cooking spray
1 egg, lightly beaten
3 tbsp all-purpose flour
3 tbsp fat-free milk
¼ tsp salt
2 tbsp orange marmalade
⅔ c sliced fruit (i.e. strawberries, kiwi, pears)
RECIPE

  • Preheat oven to 400ºF.
  • Lightly spray two, 10 ounce custard cups or ramekins with nonfat cooking spray, set aside.
  • In a small bowl, whisk together egg, flour, milk, and salt until smooth.
  • Divide the batter equally between the two custard cups.
  • Bake for 15-20 minutes or until puffed and golden brown.
  • While pancakes are baking, heat marmalade in microwave for 30 seconds or over stove top, stirring until melted.
  • When pancakes are done, spoon fresh fruit on top and spoon marmalade over all. Enjoy warm.
