| RECIPE |
- Preheat oven to 400ºF.
- Lightly spray two, 10 ounce custard cups or ramekins with nonfat cooking spray, set aside.
- In a small bowl, whisk together egg, flour, milk, and salt until smooth.
- Divide the batter equally between the two custard cups.
- Bake for 15-20 minutes or until puffed and golden brown.
- While pancakes are baking, heat marmalade in microwave for 30 seconds or over stove top, stirring until melted.
- When pancakes are done, spoon fresh fruit on top and spoon marmalade over all. Enjoy warm.
