INGREDIENTS

 

nonfat cooking spray

1 tbsp.

canola oil

potatoes, peeled

1

egg

 

salt and pepper to taste

 

all-purpose flour (use enough to thicken pancake batter)

1

onion, chopped (if desired)

  cinnamon applesauce
 
RECIPE

  • Spray skillet with nonfat cooking spray.
  • Cut up potatoes. Place in blender and grate.
  • Add egg, salt, and pepper. Add 1 tablespoon of flour at a time until the batter is the desired thickness.
  • Heat oil in skillet. Place prepared pancake in skillet.
  • Cook on both sides. Serve warm with cinnamon applesauce.
