INGREDIENTS

1½ cups old fashioned rolled oats (not quick cooking)
½ cup flour
½ cup raisins
½ tsp. baking soda
½ tsp. salt
6 tbsp. unsalted butter, room temperature
½ cup dark brown sugar, packed firmly
¼ cup sugar
1 large egg
1 tsp. pure vanilla extract
RECIPE

  • Preheat oven to 350ºF.
  • In a medium bowl whisk together all dry ingredients including raisins. Set aside.
  • Using an electric mixer, beat butter and sugars together until light and fluffy, scraping sides as necessary.
  • Add egg and vanilla to butter mixture, beat until combined.
  • Gradually add the oat mixture, beat until combined.
  • Drop by rounded tablespoons, 2 inches apart on baking sheet.
  • Bake for 12-16 minutes or until cookies are golden brown but still soft.
  • Cool 5 minutes on sheets; transfer to wire rack to cool completely.
