INGREDIENTS

2 whole wheat English Muffins, split
8 medium mushrooms
2 oz. Canadian bacon
1 medium tomato, sliced thinly
½ cup low-sodium tomato sauce
½ tsp. Italian seasoning
¾ cup part-skim, shredded mozzarella
RECIPE

  • Preheat oven or toaster oven to 350ºF.
  • Wash and chop mushrooms.
  • Cut Canadian bacon into 4 pieces.
  • Divide tomato sauce evenly between the 4 split muffin halves.
  • Top with Canadian bacon, tomato slices, mushrooms, Italian seasoning, and cheese.
  • Bake for 5-10 minutes or until hot and bubbly.
