INGREDIENTS

4 low fat whole wheat flour tortillas
1 cup low sodium salsa
1 cup shredded cooked chicken
½ cup canned black beans, rinsed and drained
½ cup frozen sweet corn, thawed
1 cup reduced fat Monterey Jack cheese
RECIPE

  • Preheat oven to 450ºF.
  • Place tortillas on a large baking sheet.
  • Spread ¼ cup salsa over each one.
  • Sprinkle remaining toppings evenly over tortillas, finishing with cheese.
  • Bake for 8 minutes, or until cheese is melted.
