INGREDIENTS

4 6-inch sub rolls, hollowed out
2 tbsp. olive oil
1 cup mozzarella cheese
12 meatballs*
1 cup sauce *
2 tbsp. Parmesan cheese
RECIPE

  • Preheat oven to 450º F.
  • Slice off thin layer on top of each roll.
  • Remove some of the inside bread making a “boat.”
  • Brush the inside of each roll with olive oil and place on baking sheet.
  • Divide mozzarella among the four rolls, and place in oven to melt cheese and toast roll.
  • Fill each roll with 3 meatballs and ¼ cup sauce.
  • Sprinkle with Parmesan cheese and enjoy!

    *Use leftover meatballs and sauce from Tuesday’s dinner.
