INGREDIENTS

1 cup unsalted butter
¾ tsp. vanilla extract
½ cup sugar
½ cup firmly packed brown sugar
2 eggs, beaten
2 cups sifted all-purpose flour
½ tsp. baking soda
1½ cups rolled oats, quick or old fashioned
48 small gumdrops
RECIPE

  • Preheat oven to 375˚F. Spray cookie sheets with non-fat cooking spray.
  • Cream butter with vanilla extract.  Add sugars gradually, creaming well.
  • Add eggs and beat thoroughly.
  • Sift flour and baking soda together.  Add to creamed mixture and mix well.  Stir in oats.
  • Shape dough into balls and place on greased cookie sheet.  Make a hollow in each ball and place a gumdrop in each hollow.
  • Bake for 10 to 12 minutes.  Remove from cookie sheet and cool on wire rack.

    Make these with colorful gumdrops for a holiday treat.
