INGREDIENTS

2 cups unsweetened apple juice
1 cup filtered water
1½ tsp. cinnamon
½ tsp. salt (optional)
2 cups old fashioned oats (not quick)
1 (6 oz.) container of fat-free French vanilla yogurt
2 medium peaches, peeled and chopped (about 1½ cups)
2 tbsp. sliced almonds (optional)
RECIPE

  • Using a 2 quart saucepan, bring apple juice, water, cinnamon, and salt to a boil over high heat.
  • While liquid is boiling, add oats. Return to a boil, reduce heat to medium low. Cook for 5 minutes, stirring occasionally.
  • Stir in yogurt and peaches. Continue cooking, stirring occasionally, for 2 minutes or until oatmeal is heated through.
  • Serve topped with almonds.
