INGREDIENTS

½ cup chopped pecans
cup raisins
¼ cup sifted powdered sugar
2 tbsp. unsalted butter, softened
1 tsp. ground cinnamon
1 tsp. vanilla
1 pkg. (8) refrigerated biscuits

White glaze:

½ cup sifted powdered sugar
2 tsp. skim milk
¼ tsp. vanilla
RECIPE

  • Preheat oven to 350°F.
  •   Mix ¼ cup of pecans with the next 5 ingredients.

  • Unroll the biscuits without separating them.
  • Spread pecan and raisin mixture evenly over the dough. Fold dough in half lengthwise and seal along the edges.
  • Gently stretch dough to a 24-inch strip and twist lightly.
  • Shape into circle on ungreased baking sheet and seal ends.
  • Bake, uncovered for about 20 minutes or until golden.  Cool slightly.
  • Prepare White Glaze: Mix powdered sugar, skim milk, and vanilla together.  Drizzle over cooled coffee cake.
