parsley, minced |

light mayonnaise |
| 3 tsp. |
garlic, minced |
| 1 tsp. |
grated lemon zest |

fresh lemon juice |

| RECIPE |
- Preheat oven to 450ºF and place rack in middle of oven.
- Spray baking sheet with cooking spray.
- Rinse cod fillets and pat dry. Place on baking sheet.
- In small bowl, mix mayonnaise, garlic, lemon zest, and juice.
- In another small bowl, mix cracker crumbs and parsley.
- Brush mayonnaise mixture on cod.
- Press cracker crumbs on top of mayonnaise, pressing down to adhere.
- Bake until crumbs are golden and fish flakes easily with a fork, about 10-15 minutes.
