INGREDIENTS

1 cup crushed Ritz low-sodium crackers
2 tbsp. parsley, minced
3 tbsp. light mayonnaise
3 tsp. garlic, minced
1 tsp. grated lemon zest
1 tbsp. fresh lemon juice
4 skinless cod fillets (6 ounces)
RECIPE

  • Preheat oven to 450ºF and place rack in middle of oven.
  • Spray baking sheet with cooking spray.
  • Rinse and pat dry cod fillets and place on baking sheet.
  • Mix in small bowl, mayonnaise, garlic, lemon zest, and juice.
  • In a second small bowl, mix cracker crumbs and parsley.
  • Brush mayonnaise mixture on cod.
  • Press cracker crumbs on top of mayonnaise, pressing down to adhere.
  • Bake until crumbs are golden and fish flakes easily with a fork, about 10-15 minutes.
