INGREDIENTS

2 (1 lb.) unwaxed cucumbers, peeled & sliced very thin
⅓ cup low fat sour cream
2 tbsp. freshly minced dill weed
1 medium to large sweet onion, sliced very thin
½ tsp. sugar
½ cup radishes, sliced very thin
½ tsp. salt
3 tbsp. fresh lime juice
1 tbsp. freshly minced chives
RECIPE

  • Place the sliced cucumbers and onions in large bowl, sprinkle with salt, toss and let rest about 5-10 minutes to bring out some of the moisture.
  • While cucumbers and onions are resting, mix together the sour cream, sugar, lime juice, and dill weed in a large serving bowl.
  • Drain cucumbers and onions on paper towels to absorb excess moisture.
  • Place in serving bowl with sour cream mixture, add radishes, and toss gently.
  • Cover and chill for at least 1 hour.
  • Before serving salad, sprinkle with chives.
