INGREDIENTS

2 whole medium eggs
4 egg whites
1 cup fat-free milk
½ tsp. cinnamon
8 slices cinnamon swirl bread
Topping:
16 oz. fat-free plain yogurt
5 tbsp. maple syrup
2 cups coarsely chopped fresh fruit (such as grapes, strawberries, oranges, blueberries, peaches)
RECIPE

  • Whisk together yogurt and maple syrup. Cover with plastic wrap and refrigerate.
  • Prepare desired fruit, cover with plastic wrap and refrigerate.
  • In a medium bowl, whisk together eggs, milk, and cinnamon.
  • Lightly coat a large nonstick skillet with cooking spray.
  • Preheat skillet over medium heat.
  • Dip each slice of bread into the egg mixture and coat thoroughly.
  • As each slice is coated, place in skillet and cook for about 2 minutes on each side.
  • Serve with yogurt mix and top with desired fruit.
