INGREDIENTS

1 egg, well beaten
2½ cups skim milk
3 tbsp. quick cooking tapioca
¼ cup sugar
1 tsp. vanilla extract
3 tbsp. semisweet cocoa powder
RECIPE

  • In a medium saucepan, combine egg, milk, tapioca, and sugar. Let stand for 5 minutes.
  • Cook tapioca over medium heat, stirring constantly, until mixture comes to a full boil, 6-8 minutes.
  • Add vanilla and cocoa powder. Stir only enough to mix.
  • Pour into serving cups. Let cool for 20 minutes. Chill.
