INGREDIENTS

1 cup raisins
1 tbsp. water
¾ cup firmly packed brown sugar
2 tbsp. canola oil
1 cup applesauce
4 egg whites
2 tbsp. skim milk
2 tsp. vanilla extract
¾ cups whole wheat flour
¾ cups all-purpose flour
1 tsp. baking soda
1½ tsp. cinnamon
3 cups rolled oats
cup walnuts
½ cup powdered sugar
RECIPE

  • Preheat oven to 350°F.
  • Place raisins and water in a microwave safe bowl. Microwave on high for 1 minute. Let raisins soak.
  • In a large bowl, mix brown sugar, canola oil, applesauce, egg whites, skim milk, and vanilla.
  • Add raisins to sugar mixture.
  • Measure and sift flours, baking soda, and cinnamon. Add to the large bowl.
  • Add the rolled oats and walnuts to the large bowl. Mix thoroughly.
  • Spread dough into an ungreased 13x9” baking pan.
  • Bake for 20-23 minutes. Cool. Cut into bars.
