INGREDIENTS

2 tbsp.

mayonnaise

¼ cup low fat buttermilk
½ tbsp. cider vinegar
1 tsp. honey
1 cup cooked brown rice
1 cup grated or shredded carrots (3 medium)
2 tbsp. finely chopped or thinly sliced green onion
½ cup golden raisins
RECIPE

  • Put mayonnaise into a medium bowl.
  • Slowly whisk in buttermilk until smooth.
  • Whisk in vinegar and honey.
  • Add rice, carrots, onion, and raisins. Toss to coat.
  • Serve at once, or cover and chill thoroughly.
