INGREDIENTS

2 cups flour
2 tbsp. sugar
2 tsp. baking powder
1 tsp. baking soda
2 cups nonfat buttermilk
⅓  cup unsalted butter, melted
2 large eggs
2 tsp. vegetable oil
RECIPE

  • Preheat oven to 275ºF. Place a baking sheet in the oven.  (This will keep the waffles warm while each is being made.)
  • In medium bowl, whisk together flour, sugar, baking powder, and baking soda. Set aside.
  • In large bowl, whisk together buttermilk, butter, and eggs.
  • Add flour mixture and mix just until batter is combined (it will still be lumpy).
  • Heat waffle iron. Brush waffle iron with oil.
  • Pour batter onto iron leaving ½-inch border for expansion.
  • Close waffle iron and cook until golden brown. Transfer waffle to baking sheet in oven and repeat until all are made.
