| RECIPE |
- Preheat oven to 350°F.
- Combine sugar and butter in a large bowl. Beat with a mixer at medium speed until light and fluffy.
- Add applesauce and mashed banana, beating until well blended.
- Add eggs, one at a time, beating well after each egg. Beat in coffee and vanilla.
- Combine flour and remaining ingredients, except powdered sugar. Stir well with a whisk.
- Add flour mixture to the wet ingredients. Stir until just combined.
- Scrape batter into an 8x8” baking pan sprayed with nonfat cooking spray.
- Bake for about 40 minutes or until a toothpick inserted into center comes out clean.
- Sift powdered sugar over cooled cake, if desired.
