INGREDIENTS

½ cup unsweetened applesauce
1 cup sugar
¼ cup unsalted butter, softened
½ cup mashed ripe banana
2 large eggs
1 tsp. instant coffee granules
1 tsp. vanilla extract
1 cup all-purpose flour
½ cup unsweetened cocoa
½ tsp. baking soda
¼ tsp. salt
  powdered sugar (optional)
RECIPE

  • Preheat oven to 350°F.
  • Combine sugar and butter in a large bowl. Beat with a mixer at medium speed until light and fluffy.
  • Add applesauce and mashed banana, beating until well blended.
  • Add eggs, one at a time, beating well after each egg. Beat in coffee and vanilla.
  • Combine flour and remaining ingredients, except powdered sugar. Stir well with a whisk.
  • Add flour mixture to the wet ingredients. Stir until just combined.
  • Scrape batter into an 8x8” baking pan sprayed with nonfat cooking spray.
  • Bake for about 40 minutes or until a toothpick inserted into center comes out clean.
  • Sift powdered sugar over cooled cake, if desired.
