INGREDIENTS

4 (4 oz) tilapia fillets
1/4 cup fresh lemon juice - about 2 lemons
1/4 cup dry white wine (i.e. Chardonnay)
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1 cup chopped tomato
1 cup grated carrot
1/4 cup sliced green onions
1/4 cup chopped fresh parsley
RECIPE

  • Preheat oven to 350 degrees F.
  • Place fish in baking dish.
  • Comine lemon juice and wine, pour over fish.
  • Combine salt, pepper and garlic powder, sprinkle over fish.
  • Top with vegetable.
  • Cover with foil and bake for 25 - 30 minutes or until fish flakes easily with fork.
