INGREDIENTS

½ lb cooked turkey breast, chopped
2 tbsp red onion, minced
¼ c chopped celery
¼ c granny smith apples, chopped
2 tbsp dried cranberries, minced
½ tsp dried minced garlic
3 tbsp canola mayonnaise
1 tbsp nonfat sour cream
½ tsp Dijon mustard
1 tbsp white vinegar
⅛ tsp dried thyme
⅛ tsp salt
⅛ tsp black pepper
6 (10-inch) whole wheat tortillas
1½ c baby spinach, washed and dried
RECIPE

  • Combine turkey, onions, celery, apples, cranberries, garlic, mayonnaise, sour cream, mustard, vinegar, thyme, salt and pepper in large bowl and mix well.
  • Place turkey mixture in food processor and pulse for 2-3 seconds at a time until mixture is finely diced.
  • Lay tortillas on flat surface and divide spinach leaves equally on top of each tortilla.
  • Place ¼ c turkey mixture on top of spinach and spread out.
  • Roll up like a burrito and enjoy!
