INGREDIENTS

1 lb. extra lean ground beef
2 tsp. chopped garlic
1 onion diced
1 can (28 oz.) chopped tomatoes
3 stalks of celery, chopped
6 potatoes, cubed into bite size pieces
3 carrots, peeled and sliced
1 bag (8 oz.) frozen mixed vegetables (green beans, peas, corn, carrots)
4 cups low-sodium beef broth
1 tsp. basil
RECIPE

  • Sauté hamburger, onion and garlic in a large Dutch oven over high heat until cooked. (If beef sticks, add a little water to release.)
  • Drain any fat if necessary.
  • Add the tomatoes, celery, potatoes, carrots, frozen vegetables, beef broth, and basil to the beef.
  • Stir together. Let simmer for 2-3 hours.
