INGREDIENTS

1 c nonfat plain yogurt
2 tbsp garam masala (Indian spice)
1 lb turkey tenderloin, cut into 2” pieces
¾ c dry whole-wheat couscous
⅓ c dried fruit mix, chopped – any variety
2½ tsp chopped garlic
½ tsp ground ginger
RECIPE

  • In a medium bowl, combine yogurt, garam masala, garlic, ginger, and salt to taste. Add turkey and marinate for at least 10 minutes.
  • Soak 8 wooden skewers in a bowl of water and set aside.
  • Spray grill grates with cooking spray and preheat grill.
  • Meanwhile, prepare couscous according to package instructions, adding dried fruit during cooking.
  • Slide turkey onto skewers. Place kebabs on hot grill and cook, turning frequently, until turkey is cooked through (10 to 12 minutes).
  • Place 1/2 cup couscous onto each of four plates. Top each with 2 kebabs.

SERVING SIZE:
 2 skewers with ½ cup prepared couscous
