INGREDIENTS

4 (6-oz) salmon filets, skinned
10 oz baby spinach
1 pt grape tomatoes
¾ c crumbled low fat feta cheese
¼ c toasted pecans
  Balsamic Dressing
RECIPE

  • Preheat broiler, place salmon filets on broiler pan, season with salt and pepper if desired, and broil in top third of oven for about 7-10 minutes or until fish flakes easily with a fork – do not turn over.
  • Divide spinach and tomatoes on plates. Top each with a cooked filet, sprinkle evenly with feta, pecans and drizzle with dressing.

 1 filet w/salad and 1 tbsp dressing
