INGREDIENTS

2 lb baby red potatoes, scrubbed well
1 tbsp olive oil
1 tsp freshly ground pepper
½ tsp kosher salt
  cooking spray
RECIPE

  • Preheat oven to 375ºF.
  • Cut potatoes in half.
  • Toss with olive oil, salt and pepper.
  • Spread in single layer on baking sheet lightly coated with cooking spray.
  • Bake for 20-30 minutes or until tender and light brown.
