INGREDIENTS

3 large ripe peaches or 1 large can peaches packed in juice drained well (you need 6 peach halves)
1 tbsp brown sugar
2 tsp fresh lemon juice
3 c nonfat vanilla yogurt
6 ginger snaps, crumbled
RECIPE

  • Preheat oven to 425°F.
  • Line a baking sheet with parchment paper.
  • Gently toss peach halves with brown sugar and lemon juice.
  • Place them cut-side-up on the prepared baking sheet.
  • Roast until the peaches are tender, 10-15 minutes.
  • If the juice on the pan begins to burn, add a little water and loosely cover the fruit with foil.
  • Place one peach half in bowl, top with a 1/2-cup scoop of frozen yogurt and a sprinkle of crumbled gingersnaps. Enjoy!
