INGREDIENTS

4 medium fresh roma tomatoes, diced.
1½ c canned low-sodium diced tomatoes
½ c diced red onions
3 tbsp chopped scallions
½ c diced yellow pepper
1 tbsp diced jalapeno peppers
¼ c chopped cilantro
1 tbsp + 1 tsp fresh lime juice
1 tsp salt
tsp freshly ground black pepper
½ tsp dried oregano
¼ tsp garlic powder
RECIPE

  • Place everything in a large glass bowl, cover and chill.
