| RECIPE |
- Preheat oven to 400ºF.
- Mix marmalade and lemon juice in small bowl, set aside.
- Season chicken with salt and pepper.
- Heat olive oil in large nonstick sauté pan over medium-high heat.
- Sear chicken for 1 minute on each side, place chicken in a baking dish and bake for 15-20 minutes or until chicken has an internal temperature of 165ºF.
- Serve each breast with ⅓ cup cranberry orzo and 1 tablespoon orange marmalade drizzled over chicken.
