firm white fish, such as cod or halibut |

dried mixed herbs |

| RECIPE |
- Preheat oven to 450ºF.
- Place a large cookie sheet coated with nonstick cooking spray in the oven to heat up.
- Meanwhile cut fish into 2-3 inch chunks.
- Put beaten egg into a small bowl.
- Combine breadcrumbs, herbs, paprika and pepper in a large shallow bowl.
- Carefully remove cookie sheet from oven and place on protected surface.
- Dip the fish first into the egg and then into the breadcrumb mixture, carefully place each piece on to the cookie sheet.
- Bake for 8-10 minutes, turning once, until fish is cooked through.
