INGREDIENTS

1 large egg
4 large egg whites
3 tbsp light coconut milk
½ c nonfat milk
¼ tsp ground nutmeg
½ tsp ground cinnamon
½ tsp pure vanilla extract
8 sl multigrain bread
2 tbsp Orange Ginger Syrup
1 tbsp orange marmalade
1 tsp minced fresh ginger
½ c pure maple syrup
1 tsp fresh lime juice
RECIPE

  • Whisk together well egg, egg whites, coconut milk, nonfat milk, nutmeg, cinnamon and vanilla in shallow bowl.
  • Heat a sauté or grill pan and spray with cooking spray.
  • Dip both sides of each bread slices in egg batter and cook over medium heat until golden brown, about 1 minute on each side.  If you do not have enough room, cook what you can, and keep warm in a 200ºF oven.
  • While the French toast is cooking, whisk together the orange marmalade, ginger, maple syrup and lime juice in small bowl.
  • Serve two slices of French toast with 2 tablespoons syrup.
