INGREDIENTS

¾ tsp  unsalted butter
2 tbsp diced onion
½ tsp minced garlic
⅔ c uncooked orzo
¾ c + 2 tbsp chicken stock
¼ tsp salt
⅛ tsp freshly ground pepper
3 tbsp dried cranberries
RECIPE

  • Heat butter in large sauce pan over medium heat, sauté onions and garlic until softened and translucent.
  • Add orzo and sauté for 2-3 minutes or until golden brown.
  • Add chicken stock and simmer, stirring frequently, until liquid is almost absorbed, remove from heat, add salt, pepper and cranberries, combine.
  • Serve immediately.
