INGREDIENTS

1 c buttermilk
¾ c corn meal
¼ c flour
½ tsp soda
½ tsp salt
1 tsp baking powder
1 tsp sugar
¼ c egg substitute
RECIPE

  • Preheat oven to 400ºF.
  • Spray an oven proof 8x8 casserole or muffin tin and place in oven to heat up.
  • Gently combine all ingredients in medium bowl.
  • Carefully remove dish from oven and pour batter into dish or muffin tin.
  • Bake for 20 minutes or until light brown and toothpick comes out clean when inserted in the center.

 1 muffin or ⅛ of casserole
