INGREDIENTS

½ tsp paprika
⅛ tsp salt
¼ tsp cayenne pepper
¼ tsp ground cumin
¼ tsp dried thyme
⅛ tsp ground white pepper
⅛ tsp onion powder
2 (4 oz) skinless, boneless chicken breast halves
2 tsp vegetable oil
RECIPE

  • Preheat oven to 350º.
  • Mix together paprika, salt, cayenne, cumin, thyme, pepper and onion powder.
  • Rub one side of chicken breasts with spice mixture.
  • Heat oil in a cast iron skillet over high heat for 15 minutes.
  • Place chicken in hot pan, seasoned side down, and cook for 1 minute. Turn, and cook 1 minute on other side.
  • Place pan in oven and bake for 5-10 minutes or until chicken has an internal temperature of 165º using an instant read thermometer.
