INGREDIENTS

1 c whole wheat pastry flour
1½ c oats
½ tsp baking powder
½ tsp baking soda
¼ tsp salt
½ cup firmly-packed brown sugar
2 egg whites
2 tbsp canola oil
1 very ripe medium banana, mashed
1 tsp vanilla extract
1 c dried fruit
RECIPE

  • Preheat oven to 350 degrees.
  • In a large bowl, whisk together flour, oats, baking powder, baking soda, salt and sugar.
  • Add egg whites, oil, mashed banana and vanilla.
  • Mix well with a wooden spoon.
  • Fold in dried fruit.
  • Drop by tablespoon full on to baking sheet lined with parchment or silicone mat.
  • Bake for 12 minutes or until lightly golden.
