INGREDIENTS

½ c + 2 tbsp low-sodium tamari sauce
1 tbsp sugar
¼ c rice vinegar
1 tbsp sesame oil
½ c sake or dry sherry
⅓ c + 2 tbsp water
⅓ c low-sodium ketchup
⅛ tsp coriander
⅛ tsp ground ginger
¼ tsp red pepper flakes
¼ c minced scallions, white part only
2 tsp minced garlic
2 tsp minced fresh ginger
RECIPE

  • Combine ½ cup tamari, sugar, rice vinegar, sesame oil, sake/sherry, and ⅓ cup water in small sauce pan, bring to a boil over medium heat then reduce to low.
  • Add ketchup, coriander, ground ginger and red pepper flakes, simmer for 10 minutes and remove from heat.
  • Add to the sauce the leeks, garlic, fresh ginger, 2 tablespoons water and 2 tablespoons tamari, stir until combined.
